Salad Dressings

• Lemon Dill Dressing •
(250 ml)
Ingredients:

1 teaspoon lemon juice
1 teaspoon lemon rind
2 teaspoons whole grain mustard paste
½ teaspoon powdered jaggery
½ teaspoon salt
¼ cup vegetable oil
¼ cup olive oil
¼ cup finely chopped dill leaves


Preparation:

Combine the lemon juice, lemon rind, whole grain mustard paste, jaggery and salt in deep bowl and whisk well.
Add the vegetable oil and olive oil gradually to the mixture while whisking it continuously using a whisk.
Add the dill leaves and mix well. Use as required.


• Roasted Red Pepper Dressing •
(250 ml)
Ingredients:

1 red capsicum medium size
Oil for brushing
1 tablespoon lemon juice
2 teaspoons whole grain mustard paste
½ teaspoon powdered jaggery
¼ cup vegetable oil
¼ cup olive oil
½ teaspoon salt
1 tablespoon fresh rosemary finely chopped


Preparation:

Pierce a fork through the capsicum, brush oil evenly over it and roast on a slow flame till it turns black in colour from all the sides.
Immerse the capsicum in the cold water, remove the skin, stem and seeds and finely chop it. Keep aside.
Combine the lemon juice, whole grain mustard paste, jaggery, vegetable oil, olive oil and salt in a mixer and blend it till smooth.
Transfer the mixture into a deep bowl, add the capsicum and rosemary. Mix well.
Use as required.
